Does anyone know how much you can take off the head before you have to worry
about valve / piston interference

The pistons on a non-interference engine will clear fully opened valves.
However, if the head/block surface is machined during a BHG repair, or if
aftermarket pistons are used, then it is possible to transform it into an
interference engine.
