After 1989, it is no longer needed to hold the handle up.

Also, the factory alarm was only available on US models.  Canadian models don't have it.

In order to disable the factory alarm, what most people do is ground out the hood pin switch.  
This tells the alarm system that the hood is open, so it never arms.  This doesn't trigger any 
lights, so it doesn't kill the battery.

(BTW, I'm looking for a factory alarm system hood switch.)

It sounds like there's also an aftermarket alarm from what you're saying about a valet switch.  
For that, I'd most likely just pull the fuse(s) for it, unless it's causing other problems.  
Since you don't have the keyfob, it must be passive arming, which is a pain in the rear at the 
best of times.

For now, locate and pull the fuse(s).  While you do that, you should make note of the make and 
model number of the alarm system.  It may be possible to locate keyfobs for it on eBay or 
similar.  Having a nice alarm is a good thing, IMO.
