Sounds like you may still have an air pocket in the system that would cause this. Did you use a Toyota thermostat, radiator cap and coolant? Those are the preferred ones for our cars.

Subject: [Supras] MK3 Cooling
I just recently did a coolant flush changed the thermostat and the radiator cap and burped the system of air and ever sice then the temp. gauge rises to operating temp after about 2.5-3 minutes driving after sitting for several hours. i think it heats up too fast. then after about 10-15 minutes of driving it rises to about 2/3 of the way up stayes there for about 1 minute or less and then falls to operating temp again. When i first bought the car it didn't do that. Could it be the coolant i am using or another problem. Also does it make a difference what kind of coolant i use. Is there any advantages to using dexcool if that is even a possiblity? or should i use the normal green stuff or go to a dealer and buy the toyota coolant? Any opinions/thoughts would help. Thanks
