The best stainless material to use for exhaust systems is T409 / T439. This is what the auto manufacturer's use for mufflers,
catalytic converter shells, automotive exhaust flanges,
gas turbine exhaust, and exhaust stampings. The stock tube header on my volvo is made of this stuff and looks exactly like it did when I first bought the car 7 years ago.
It tends to look a little rusty, unlike the T304 / T321 stuff that polishes up very blingy.

I want to say it was 304, I'm guessing 321 is the preferred SS grade for
exhaust use since I recall some of the nicer headers being made with
this.

which is why the flex section was most likely not SS.
